Snappy Peanut Butter Energy Bites

These are so easy to make and have tons of protein. Keep them in the freezer for after a work out or pack them in your gym bag to have before. Adapted from the original recipe on Ambitious Kitchen


1/2 cup natural peanut butter
1/4 cup honey
1 tablespoon vanilla extract
1/3 cup protein powder (I use Whole Foods, which doesn't have any artificial ingredients and isn't very sweet)
1/3 cup flaxseed meal
1/3 cup shredded coconut
1/2 cup extra-thick rolled oats, I use Bob's
1/4 cup mini chocolate chips
1 tablespoon chia seeds

How to make them

  • Mix everything together in a large bowl until well combined. 
  • Form into about 12 balls and place in an airtight container. Store in the fridge for up to 1 week, or the freezer for a month. But they won't last that long.
