Kale Salad with Feta

Lacinato Kale and Feta Salad with Dried Cranberries and Sliced Scallions

The original recipe calls for ricotta salata; I prefer feta. I've substituted sliced scallions for the almonds since I've developed a nut allergy

Serves 6


1 pound lacinato kale, or black or dino kale. I don't trim the stems or discard the center ribs; your preference
2 tablespoons finely chopped fresh shallot
1 ½  tablespoons fresh lemon juice
¼ teaspoon
4 ½ tablespoons excellent quality extra-virgin olive oil
1 cup crumbled feta cheese
½ cup dried cranberries (or to taste)
3 sliced scallions


Working in batches, cut kale into very thin slices

Whisk together shallot, lemon juice, salt, pepper, and olive oil in a small bowl

Toss kale, feta, cranberries, and scallions in a large bowl with enough dressing to coat well.
